Ham and Cheese Scones

 


Ingredients

· 2 cups all-purpose flour

· 1 tablespoon sugar

· 1 tablespoon baking powder

· 1/2 teaspoon garlic powder

· 1/2 teaspoon kosher salt

· 1/2 cup cold unsalted butter, cut into cubes

· 3/4 cup reduced-fat buttermilk

· 1 cup shredded cheddar cheese

· 1/3 cup diced ham

· 2 tablespoons chopped fresh chives

 

Steps

1) Preheat the oven to 425°F. Line a baking sheet with parchment paper or a silicone baking mat.

2) In a large owl, combine the flour, sugar, baking powder, garlic powder, and salt. Add the cold butter, and use your fingers to work the butter into the dry ingredients until it resembles coarse crumbs. Do not overmix.

3) Add the buttermilk, cheese, ham, and chives and stir until a soft dough forms.

4) Working on a lightly floured surface, knead the dough 3 or 4 times, until it comes together. Using a rolling pin, roll the dough into an 8-inch circle, about 1 inch thick. Cut into wedges using a knife.

5) Place the scones 1/2 to 1 inch apart on the prepared baking sheet. Bake for 18 to 20 minutes, until firm to the touch and lightly browned. Serve immediately.

6) TO FREEZE: Place the baked scones on a baking sheet in a single layer and cover tightly with plastic wrap. Freeze overnight. Transfer the scones to freezer bags and freeze for up to 1 month. To serve, defrost at room temperature for 1 hour, then bake at 325°F until warmed, 10 to 15 minutes.
