Ingredients
· 6 bacon slices
· 1 tablespoon extra-virgin olive oil
· 1 pound boneless, skinless chicken breast
· .75 teaspoon salt
· .75 teaspoon freshly ground black pepper
· .5 teaspoon dried Italian seasoning
· 6 tablespoons mayonnaise
· 6 large butter lettuce leaves
· 1 tomato, chopped
Steps
1. Preheat the oven to 400°F. Line a sheet pan with foil and put a wire cooking rack on top of the foil. Line a plate with paper towels and set aside.
2. Place the bacon slices on the wire rack in a single layer.
3. Bake for 12 to 20 minutes, depending on ow thick the bacon is and your desired level of crispiness. Transfer the bacon to the prepared plate and let cool. Roughly chop the bacon and set aside.
4. In a large skillet over medium heat, warm the olive oil.
5. Add the chicken and season with the salt, pepper, and Italian seasoning. Cook the chicken for about 15 minutes, turning it about halfway through the cooking time, until fully cooked (internal temperature of at least
165
165°F). Transfer the chicken to a cutting board and chop the chicken into a .5-inch pieces.
6. Spread 1 tablespoon of mayonnaise on each lettuce leaf. Layer .5 cup of diced chicken, some bacon, and tomato on each leaf. Wrap up the lettuce and enjoy!
