Herbed Pork Sausages


 Ingredients

· Ground pork, 1 pound

· Sea salt or kosher salt, 2 teaspoons

· Freshly ground pepper, 1 teaspoon

· Fresh sage, 2 tablespoons minced

· Fresh thyme leaves, 1 teaspoon minced

 

Steps

1) In a bowl, combine the pork, salt, pepper, sage, and thyme and mix with a wooden spoon until well blended. Using your hands, shape the mixture into 8 patties, each 3 inches in diameter and 1/2 inch thick. (The patties can be made up to 2 days ahead of time, tightly wrapped, and stored in the refrigerator. You can also freeze them for up to 6 weeks; Stack the patties , separating them with a sheet of waxed paper or aluminum foil, and freeze in heavy-duty resalable plastic bags. Thaw overnight in the refrigerator before cooking.)

2)  Heat a frying pan over medium-high heat. When the pan is hot, add the patties. Reduce the heat to medium and cook until the patties are golden brown on the bottom, about 6 minutes. Using a metal spatula, turn over the patties and cook until the other side is golden brown, about 5 minutes more. Transfer to paper towels to drain briefly. Serve right away.

Independence Day

 However you plan on celebrating the 4th of July, there’s a good chance it involves food, from a day on the lake, to a family cookout on the patio, and BPL has you covered when it comes to finding the perfect recipe! We’ve gathered five of our most American cookbooks, and included their summaries so that you have a chance to see which title is going to complement your Independence Day celebration the best! Broccoli Chicken Casserole

 


Ingredients

· 1 –1/2 cups water

· 1 package (6 ounces) chicken stuffing mix

· 2 cups cubed cooked chicken

· 1 cup frozen broccoli florets, thawed

· 1 can (10-3/4 ounces) condensed broccoli cheese soup, undiluted

· 1 cup (4 ounces) shredded cheddar cheese

 

Steps

1. In a small saucepan, bring water to a boil. Stir in stuffing mix. Remove from the heat; cover and let stand for 5 minutes.

2. Meanwhile, layer chicken and broccoli in a greased 11-in. x 7-in. baking dish. Top with soup. Fluff stuffing with a fork; spoon over soup. Sprinkle with cheese.

3. Bake, uncovered at 350° for 30-35 minutes or until heated through.

Five Nights at Freddy's

This month, we decided to highlight one of our Young Adult cookbooks: The Official Five Nights at Freddy's Cookbook, by Scott Cawthon. Over 40 recipes are divided into 8 chapters, each named after members of the “gang” – “Bonnie’s Burgers & Subs” for Bonnie, “Freddy Fazbear’s Pizza” for Freddy Fazbear, and so on. Tips, tricks, and even warnings from these creepy cartoon characters make this book a very interesting read, on top of the delicious recipes! Some of our staff’s favorite recipes include Fazcade Pulled Pork Quesadillas, Moondrop’s Blueberry Pancakes, and Bonnie’s Ultimate Burger with Crispy Buttermilk Onions. Uniquely edited photos, distressed pages, and neon colors really show the inspiration from the game Five Nights at Freddy’s. For anyone who hasn’t played the game, Wikipedia describes it as a game that “revolves around a character called Mike Schmidt, who begins working as a night security guard at Freddy Fazbear's Pizza, where the animatronics move at night and supposedly kill anyone they see by stuffing them into a spare animatronic suit”. After the game gained such popularity, a book series, a character guidebook, a graphic novel series, and a DVD were all released – all of which can be found at BPL. Five Nights at Freddy’s originated in 2014, but this featured cookbook is new to our collection within the last year. Grilled Tuna Panini with Wasabi Ginger Mayonnaise

 


Ingredients

· 4 (1/2-lb) tuna steaks

· 1/4 cup extra-virgin olive oil

· 1 teaspoon coarse ground black pepper

· 1/2 teaspoon dried lemongrass (optional)

· 4 Portuguese English muffins

· 1/4 cup prepared mayonnaise

· 1 tablespoon wasabi paste

· 1 teaspoon freshly grated ginger

· 1/2 teaspoon lemon juice

· 4 leaves Bibb lettuce

· 1 English cucumber, thinly sliced

 

Steps

1. Preheat outdoor grill or stovetop grill pan to high. Combine olive oil, pepper, salt, and lemongrass in a small mixing bowl. Brush each tuna steak on both sides with the olive oil mixture. Place on hot grill and cook until browned but still pink in the middle, about 7 minutes per side. Combine mayonnaise, wasabi paste, ginger, and lemon juice in a second mixing bowl, stir to combine, and refrigerate for at least 30 minutes. Preheat panini grill or skillet. Butter both sides of roll and grill until toasted on both sides, about 5 minutes. Lay out bottom roll and layer with lettuce, cucumber, wasabi mayonnaise, and tuna steak. Add remaining mayonnaise and top of roll. Repeat process with remaining ingredients to make additional sandwiches. Serve.
