Tomato-Feta Pasta Salad

 


Ingredients
· 1 pound short noodles, cooked according to package directions
· 1/2 cup extra virgin olive oil
· 2 lbs. cherry or grape tomatoes, halved
· 1/2 large red onion, finely chopped
· 1/3 cup white wine vinegar
· 1 pound French goat’s milk feta, diced
· 1/2 cup chopped fresh basil leaves
· 1/2 cup chopped fresh Italian flat-leaf parsley
· Salt and pepper, to taste
 
Steps
1) Drain the noodles and toss them in a large bowl with the olive oil. Set aside to cool. When the pasta is cool to the touch, gently toss in the rest of the ingredients, tasting a few bites to see if you need more salt and pepper or vinegar.
